THIS EMAIL WILL FOCUS on our Big-Theme BUBBLY tasting as we will serve between 35-40 different types and we think that it is important that you have as much information as possible NOW as we start December , finish 2012 and start to think and plan some for 2013/ YES, I am giving everyone the big benefit of the doubt and putting many of you into the proactive category that plans and is organized and ready foranything and everything! Just like us, JOIN US, we can help you accomplish some of these objectives early.
 
 
NOTHING WRONG with being ready for things as you never know what things will be thrust upon you at any minute and that you will need to deal with immediately and put everything else that you had planned on hold till you can get to them. I always have to write them down and look at my lists later as I will often forget if I do not do this. That's okay, that's knowing one's limitations, strengths and weaknesses.

WE HAVE MADE A BIG POINT to find sparkling wines and champagnes that you do not already know or that you have not tried here before. That's a big task as we have been doing these annual Big-Theme BUBBLY wine-tastings here now for years. We have sampled and tasted many from all over the world , in all different styles and grape varieties, from bone-dry to quite sweet, from the charmat process to the methode champenoise. It has always been a grand adventure for us as there are great discoveries to be made everywhere in the world, from the v ery well-known to the obscure and unexpected, shocking, who would have ever believed?!?
 
THE THING THAT MOST OF YOU DO NOT KNOW is how much work behind the scenes goes into these BUBBLY wine-tastings. We rely heavily on the help of our suppliers, brokers, resp, wholesalers, owners and wine-makers, etcetera to accomplish this as so often they have that which we are less-familiar with. Tomorrow we will have six tables pouring bubbly, sparkling wine and champagne. We want to thank them and their companies for their invaluable time and the samples that they bring to pour that make this  < br>

NOTE : Grand Cru means the very best grapes grown in champagne, and that's 5% or less. Recoltant-Manipulant means that the grapes are owned, grown and harvested by the owners and that they have not bought grapes from others to use in the process. This gives them complete control from start to finish.
 
In the past these small family-owned vineyards in these small villages of Champagne may have sold their grapes to the larger, better-known champagne houses. Now with many small and quality-oriented distributors they are being encouraged to bottle their own champagne, or at least to sell it here in the United States.
 
If these small family vineyards in these small villages of Champagne do not know what they are doing , then they would be out of business quickly, so we have to assume that they know what they are doing and that they can do it really well with fewer stumbling blocks as they are in control of everything and not at the mercy of others. This is very important to note as they put all their money, efforts and passion into the making of a great product/ champagne and not into the advertising with glossy pictures in expensive magazines. NOTE : Cremants and many sparkling wines have fewer bubbles and bigger bubbles. Some also have less pressure in them and so they do not all not need to have corks and wire closures around the corks to keep the bottles safe. Many of these are very popular because they are less expensive and also because they are easier on our systems and with less bite and acidity. They are often not as tart or tangy and may be enjoyed equally as well on their own as with a meal. There are many champagnes that are more acquired tastes and some overtones of bread and yeast and even some vanilla and oxidation and that really benefit enormously from being paired with certain foods. Tomorrow we will have a full assortment and many of these issues may be addressed if you ask one of the people pouring. They may speak specifically to each and every bottle that they pour and give you the information you need of how to best enjoy the bubbly you ultimately decide to buy.
